It seems to be if I post something sunny it will soon after snow, and when I post something for the cold it’s suddenly 70 degrees. This recipe came across my Facebook news feed the same morning we got snow in Denver. It looked so warm and delicious, I ran and got my crockpot and defrosted some crusty French bread. Alas, everything melted by noon and by three p.m. we had all the windows open. Colorado weather – you so crazy.
I returned home this past weekend from a much-needed mommy/sister/daughter Vegas trip to two extremely runny noses on two ruddy little faces. Following my reprieve from mommying, I was able to come home and jump right in with our little snot monsters. It was nonstop until 4am; comforting our youngest. Which is coincidentally 5 hours later than I stayed up both nights in Las Vegas. We saw Menopause the Musical at Harrah’s. I use Oil of Olay. I drink decaf in the afternoon. I. Am. Old.
One of my many roles in life is that of a volunteer peer support counselor. I provide support and resources to women with specific hormone based mood disorders including premenstrual dysphoria and (at times) postpartum depression. Both of which I have had the displeasure of experiencing myself. Any new mom can find themselves in a state of shock after giving birth. Especially when it comes to the (seemingly) never-ending cycle of feeding. It may still be a month or so until Spring officially starts, but the weather in Colorado has been so deliciously springtime it seemed only fitting to bake something sunny. The secret to this bubbly strawberry-filled lemon cupcake is using lemon flavored sparkling water instead of milk in the recipe. This simple swap makes for a super fluffy cupcake with a hint of lemon to start building upon. Of course, when I go lemon I like to go lemon and add in a generous amount of fresh lemon juice with a few teaspoons of lemon extract along the way.Read More »
Our son is currently 16 months old and unbelievably adorable. He’s huge too. Like in the 98% for height, weight, and head circumference. He has the name and the build to be a future right defenseman for the
Colorado Avalanche Boston Bruins. He may also grow up to be a tuba player in a marching band. Really, whatever makes him happy because he’s such a happy little buddy and I’d like him to stay that way.
Things that are currently making him happy? Peppa Pig, Elmo, toy cars, real cars, books about cars, pictures of cars, songs about buses (and cars), as well as carbohydrates and cheese. Know what doesn’t make him happy? Fruit. Our son hates fruit.
