I returned home this past weekend from a much-needed mommy/sister/daughter Vegas trip to two extremely runny noses on two ruddy little faces. Following my reprieve from mommying, I was able to come home and jump right in with our little snot monsters. It was nonstop until 4am; comforting our youngest. Which is coincidentally 5 hours later than I stayed up both nights in Las Vegas. We saw Menopause the Musical at Harrah’s. I use Oil of Olay. I drink decaf in the afternoon. I. Am. Old.
It may still be a month or so until Spring officially starts, but the weather in Colorado has been so deliciously springtime it seemed only fitting to bake something sunny. The secret to this bubbly strawberry-filled lemon cupcake is using lemon flavored sparkling water instead of milk in the recipe. I am going to be deeply sad when Valentines Day is over and I no longer have an everyday excuse to make all things pink. These cupcakes were as fun to photograph as they were to decorate. Using a simple white cake recipe from our favorite in geekery baking, we whipped up some simple sweetness for a
day week of delightful treats.
There are two great indulgences in this world that are available to everyone from high class to white trash and that’s real butter and afternoon tea. Like many, we drink a lot of coffee in our house: to get us going in the morning and keep us going during the day. Hubby’s family also has this ritual of coffee after dinner that carries over into our home at times as well. There is something about having tea, however, that is a sort of special occasion. It slows down time; the 10 minutes spent is exceptional.
I like to honor these distinctive yet rare occasions with a notable treat as well. My favorite as of late are these buttery shortcakes. While they are well intentioned for other things like strawberries and cream cheese, I encourage you to treat yourself to an afternoon tea like the queen you are and serve these shortcakes like scones.
Time for the short, sweet, and simple things always seems to fleeting. So any moment I get to read some trashy gossip mags, I take it! So what if I’m a little behind on my celebrity gossip (What Jen’s having a baby!?!) – although because of XM Radio I did hear this morning that Heidi and Seal are getting divorced (if they can’t make it – who can?!?!).
My addiction is the ever amazing salt/sugar combo so I love making these, especially during the holidays. I’ve never seen anyone turn down the offer of one. Suddenly, one turns into a handful and before you know it you’re hooked. Try making these at your next get together, I guarantee – a crowd pleaser. This year I made them for a family dinner at my house and brought them to 3 houses on Christmas. They’re easy to make and everyone loves them. Score!
