One of my many roles in life is that of a volunteer peer support counselor. I provide support and resources to women with specific hormone based mood disorders including premenstrual dysphoria and (at times) postpartum depression. It may still be a month or so until Spring officially starts, but the weather in Colorado has been so deliciously springtime it seemed only fitting to bake something sunny. The secret to this bubbly strawberry-filled lemon cupcake is using lemon flavored sparkling water instead of milk in the recipe. This simple swap makes for a super fluffy cupcake with a hint of lemon to start building upon. Our son is currently 16 months old and unbelievably adorable. He’s huge too. Like in the 98% for height, weight, and head circumference. He has the name and the build to be a future right defenseman for the
Colorado Avalanche Boston Bruins. He may also grow up to be a tuba player in a marching band. Really, whatever makes him happy because he’s such a happy little buddy and I’d like him to stay that way.
Things that are currently making him happy? Peppa Pig, Elmo, toy cars, real cars, books about cars, pictures of cars, songs about buses (and cars), as well as carbohydrates and cheese. Know what doesn’t make him happy? Fruit. Our son hates fruit.
It’s been over a year since I last posted and I can’t think of a better recipe to post upon my return. A lot has happened since 2014 and most of it had a lot to do with the heart. Love and heartache and starting up again.
I won’t bore you with the details as I am quite bored with the details myself. Let’s just say that sometimes you have to fall completely to pieces before you can be whole.
Time for the short, sweet, and simple things always seems to fleeting. So any moment I get to read some trashy gossip mags, I take it! So what if I’m a little behind on my celebrity gossip (What Jen’s having a baby!?!) – although because of XM Radio I did hear this morning that Heidi and Seal are getting divorced (if they can’t make it – who can?!?!).
That hubby of mine sure has some good (make it great) ideas! Here’s his for some healthy, belly-filling, poop-inducing, s’more squares.
Okay so they won’t make ya go, but they’re a lot better for you than their Rice Crispy counterparts. Just don’t make them after two glasses of pinot because then you’ll eat the other half of the mini-marshmallow bag before the chocolate is even done melting.
